Puff pastry with tomatoes – made from homemade dough based on a simplified recipe

Crunchy puff pastry and fruity tomato filling make these snacks so irresistibly delicious. You can do the dough yourself according to this simplified recipe. The puff pastries are an ideal snack for any party or takeaway on the go, but can also be served for lunch or dinner. They taste both warm and cold delicious.

Recipe for puff pastry appetizers with tomatoes

Ingredients for puff pastry appetizers

for the dough

  • 400 g butter (from the freezer)
  • 1 egg (cold)
  • 150 ml of water (ice cold)
  • 2 tablespoons vinegar
  • 1/3 teaspoon salt
  • 570 g of flour

for the filling

  • 960 g of tomatoes
  • 90 g of grated cheese
  • 3 onions
  • parsley
  • salt
  • pepper
  • vegetable oil

For painting

  • 1 egg

Tip: If you do not want to immediately process the whole dough, you can freeze the leftover dough. In this case, you have to adjust the amount of filling information to the amount of dough. The frozen dough must be thawed in the refrigerator before being processed.

Preparation of puff pastry appetizers

First, prepare the puff pastry.

Step 1: Put the egg, vinegar, and salt in a bowl and stir. Add water and stir. Keep the mixture cold as long as you prepare the remaining ingredients.

Step 2: Finely chop butter in the flour until it softens.

Tip: You can either make it with a knife or roughly grate butter with a grater.

Step 3: Add the cold mixture from step 1 to the butter-flour mixture and stir well with a spoon or fork. Quickly make the dough into a ball, it must not get warm. Then keep it cold for 2 hours.

Important: Do not knead the dough so that it will “flake” at the end.

Tip: If the dough is too dry and can not be made into a ball, add some cold water.

Now prepare the filling.

Step 4: Slice onions and fry them in a pan in vegetable oil until glassy.

Step 5: Cut the tomatoes into cubes and add them to the onions. Stir for about 3 minutes, stirring with salt and pepper, and remove from the heat.

Step 6: Chop parsley small, add to the tomatoes and stir.

Already the filling is ready for the puff pastry.

Step 7: Roll the dough about 3 mm thick without kneading it and cut it into equal squares. Leave 1 cm wide edge on each side of each square and cut a smaller rectangle without cutting through the dough.

Step 8: Divide the squares on a baking sheet lined with baking paper. Stir an egg and use it to smear the edge of each square.

Step 9: Distribute the tomato filling in the middle of each dough square and sprinkle with grated cheese.

Step 10: Bake the puff pastry in a preheated oven at 210 ° C for about 20 minutes.
